In my first month with the Brookhaven Fire Department, I’ve tried a variety of different breakfast biscuits throughout town. Some came from gas stations, others a doughnut place or a well-known biscuit shop. All were enjoyed with the crew on Engine 4.

Fire departments have different traditions and the first tradition I experienced with Brookhaven was the morning trip to find breakfast. It is hard to fight fires, respond to wrecks or investigate the cause of alarm calls if you do not start the day with a good breakfast.

Breakfast biscuits are the perfect meal for the fire department. They are quick, inexpensive and sustain the fireman until it is time for lunch, which in my case lunch is sometime after I finish my morning workout.

I cannot answer who has the best biscuits in town and I worry I have not had a chance to try all of them. However, I can say you have several options in Brookhaven for a good breakfast biscuit. My first breakfast with the fire department was at the Donut Palace. Normally, I would order two dozen donut holes there but I tried their sausage biscuit. It must have been good because I ate it in less than five minutes.

Of course, we visited Dude’s Biscuits one morning. My go-to order at Dude’s is the bacon trail biscuit which I believe comes with your choice of meat, egg and cheese. It is arguably the most complete breakfast biscuit in Brookhaven.

The Old Koke Plant sells a delicious chicken biscuit. I could be wrong, but not every place that serves biscuits offers a chicken biscuit. I simply enjoy sitting down at the Old Koke Plant and eating a meal, whether it be breakfast or lunch.

One pleasant surprise is the Handy Mart on Brookway Boulevard. Perhaps it was sheer ignorance, but I had no idea the Handy Mart sold sausage biscuits. Shame on me because the biscuit itself is the best in town. Some breakfast biscuits you get are too big, too dry or not fresh enough. Handy Mart’s biscuits taste fresh, warm and have the right amount of butter where it is not dry.
